- 4 cups white navy beans
- ½ pound salt pork – rinse in cold water – then cut into 1-inch cubes (or use Bacon, but don't rinse).
- 1 onion – finely cut.
- ½ cup fancy molasses
- ½ teaspoon pepper
- ½ teaspoon dry mustard
- 1 cup ketchup
- ¾ cup brown sugar
- Sort
and rinse beans.
- SOAK BEANS OVERNIGHT in cold water. Drain.
- Add 10 cups cold water, cover, heat to boiling, then simmer 30 minutes or until nearly tender.
- Drain – reserve the water.
- Add ingredients (except pork/bacon) in with the beans, stirring gently to combine
- Pour entire mixture into the bean pot.
- Add enough reserved water to cover mixture
- Place pork/bacon on top – push down into mixture.
- Cover with lid and bake in oven at 250°F for 7 hours.
- Add reserved water as needed to keep beans covered. One hour before serving, remove cover to darken up the beans.
